Subko opened in Ranwar village, Bandra West in March 2020 and quickly became the city's most technically focused specialty roastery and bakehouse. Founder Rahul Reddy holds a Q Grader certification and sources beans directly from estates across Karnataka, Tamil Nadu, the Northeast, and neighboring Nepal. The menu runs from precisely pulled espressos and cold brew tonics to inventive seasonal creations, all served in a beautifully restored heritage-bungalow space. In-house bread and pastries by Head of Bread Daniel Trulson round out the food program well beyond cafe snacks.
