Established in 1995, Caffe Vita's Pike Street roastery and cafe has been a Capitol Hill institution across three decades of Seattle coffee history. The roasting operation behind the counter is visible from the bar, and the education-focused team runs free Sunday brew classes covering Chemex, Aeropress, and pour-over techniques. A founding pillar of Seattle's third-wave movement, still independently owned.
