Opened in 2013 by Paola Laguna and Jose Alberto Rosero inside a restored Victorian house in Quinta Camacho, Bourbon pioneered the neighborhood''s now-thriving coffee cluster. The roastery works directly with growers from Cundinamarca and Santander, profiling each microlot before roasting on site. The founders later launched Tropicalia, but Bourbon remains an important address in its own right.
